Dough rising timer
Know when each dough batch will be ready.
What it does
When to use
- A dough batch is on the bench and you want start and target-ready on one card.
- You want today’s Bangkok batches on a day list, plus recent days.
- Status is a shop word: still a draft, proofing, ready, or aborted.
Examples
- Croissant laminating: nickname “Fri croiss”, start 06:30, target ready 09:00. Status proofing.
- Overnight brioche: start 21:00, target ready 06:00 the shop’s next day. Status draft until it goes in.
- Aborted: the batch was dumped. The card stays a note. Formula and stock qty stay put.
When not to use
- A temper timer (melt, cool, work). That is Chocolate temperature. Never this board.
- Display-case open / mid / close °C. That is Display fridge temp. No probe and no degrees here.
- Free formula, materials list, cost, or stock quantity. A cure rack. Station waste. Never.
Features
- New card. Batch nickname and the shop’s day. Type start and target ready. Status starts as draft.
- Move the status to proofing, ready, or aborted when the shop says so. Times stay words on a clock, not a sensor.
- Today and the recent Bangkok window list the cards. Stock quantity is not touched.
