Pizza dough calculator

Pizza dough is a product any food shop can sell. Choose a style. Set the number of balls and their weight. You see the flour, water, salt, yeast or starter, and oil. It uses standard flour percentages from the total dough weight. If you use a poolish or levain, it shows that part separately from the final mix. This shows the dough, not the cost. For the true cost, use the Cost calculator or a recipe in the app. Nothing is saved.

Who uses this: Restaurant pizza, café pizza, food truck slices, home kitchens. Any food shop.

Weigh the flour. Mix the salt into the flour. Add the water. Add the starter or yeast, then oil if you use it. Mix until the dough just comes together. Rest 20 to 30 minutes. Fold. Let it rise in the fridge or at room temperature, to fit your time. Divide by ball weight. This page does not save the mix. It uses flour percentages only. For the true cost, open the Cost calculator or a recipe in KamraiDee.
